Live stations vs. plated service: which suits your event

Live stations work best for a mehndi or a large baraat crowd that is moving, dancing and eating in shifts — guests serve themselves at their own pace, and the theatre of a live grill or wok station becomes part of the entertainment. A formal walima with assigned seating usually calls for plated or family-style service instead, timed against the run-of-show so the couple’s entrance and cake-cutting never collide with dinner. Most of the weddings we produce use both: live stations for the mehndi and baraat, a more composed plated or buffet service for the walima.

What headcount does to a menu

A sixty-guest nikkah and a six-hundred-guest walima are not the same catering brief scaled up — they are different problems. Below roughly 150 guests, live stations and a tighter menu of six to eight dishes let every guest actually taste everything on offer. Past 300 guests, service speed becomes the real design constraint: enough buffet lines or waiter coverage that the queue at the biryani station never becomes the story of the evening. We plan station count and staffing against guest count before we plan the menu itself, not after.

What to ask a caterer before you book

Get dietary accommodations — vegetarian, no-beef, allergy requirements — confirmed in writing, not verbally on the day; it is the single most common source of last-minute complaints families deal with. Ask what happens if a live station runs low during peak service, and whether backup trays are held in reserve. Confirm whether service staff are the caterer’s own trained team or day-hired labour, since that difference shows up immediately in how smoothly plates move. And taste the actual menu three to four weeks out, not three months out, so what you approve is close to what actually gets served.
